Soba Noodle Salad

Ingredients:

  • 2 boxes soba noodles
  • Sesame oil (to lightly coat)
  • 3 Scallions, thinly sliced
  • 1 red bell pepper, diced
  • Vegetables – radishes, joi choi – whatever you want!
  • 1 bunch cilantro
  • 1 clove garlic, minced
  • 1 one inch piece of ginger, grated
  • 1/2 cup soy sauce
  • 3/4 cup honey
  • 1/2 cup rice vinegar
  • Sriracha chili sauce to taste
  • Black and white sesame seeds

Preparation:

Boil noodles according to box directions and rinse in cold water.  Toss lightly with sesame oil to prevents ticking.  Meanwhile, prepare your vegetables and dressing.

Garlic, ginger, soy, honey, vinegar and chili sauce can all be whisked together and tossed with noodles and prepared raw vegetables.

Garnish with sesame seeds.
