Pizza Dough

Ingredients:

  • 1 1/4 tsp. dried yeast
  • 1 1/2 cups lukewarm water
  • 1 3/4 cups bread flour
  • 2 cups all purpose flour and more to dust
  • 1 1/2 tsp. salt
  • slug of olive oil

Directions:

  1. Dissolve yeast into the 1.5 tablespoons of water. Mix with 2 Tbs. flour. Stir to make a smooth paste (about a minute) and leave under a cloth somewhere warm for about thirty minutes for it to expand and form a sponge.
  2. Combine bread and all purpose flours in a bowl and make a well in the center. Pour sponge in center and add salt, oil, and remaining water. Mix while gradually adding in the dry ingredients to make a wet dough.
  3. Knead for about 10 minutes (I found it was fine after about 7-8 minutes), until elastic and satiny.
  4. Transfer dough to a clean bowl and cover with a cloth. Let sit somewhere warm until doubled in size, about 1.5 hours.
  5. If cooking in the oven, preheat to 500º.  If cooking on the grill, turn all burners on low about 15 minutes before cooking.
