Fresh Apple Cake

Ingredients:

Honey Glaze:
1 cup confectioners’ sugar
2 tablespoons honey
2 tablespoons milk


Apple Cake:
3 cups diced Granny Smith apples, about 2 apples
1 cup lightly toasted chopped walnuts
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 1/4 cups vegetable oil
3 eggs

Directions:

  1. For the glaze: Stir all of the ingredients until smooth in a medium-sized bowl. Set the bowl aside.
  2. Fore the cake: Preheat oven to 325 degrees F. Grease a Bundt pan.
  3. In a large bowl, mix together the walnuts, apples, vanilla, and cinnamon. In a separate bowl, mix together the flour, baking soda, and salt. (I combined this all into one bowl and it was fine.)
  4. Using an wooden spoon or an electric mixer beat the sugar, eggs, and in a large bowl. Add the dry ingredients to the bowl and beat until completely combined. Then add the apple mixture.
  5. Scrape the batter into the oiled pan and bake for 1 1/2 hours, or until a fork or toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool in the pan, about 1 hour, and then extract cake from pan. (I did not do this and parts crumbled.)
  7. Drizzle the glaze on top of the apple cake before serving.
