Fresh Apple Cake
Ingredients:
Honey Glaze:
1 cup confectioners’ sugar
2 tablespoons honey
2 tablespoons milk
Apple Cake:
3 cups diced Granny Smith apples, about 2 apples
1 cup lightly toasted chopped walnuts
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 1/4 cups vegetable oil
3 eggs
Directions:
- For the glaze: Stir all of the ingredients until smooth in a medium-sized bowl. Set the bowl aside.
- Fore the cake: Preheat oven to 325 degrees F. Grease a Bundt pan.
- In a large bowl, mix together the walnuts, apples, vanilla, and cinnamon. In a separate bowl, mix together the flour, baking soda, and salt. (I combined this all into one bowl and it was fine.)
- Using an wooden spoon or an electric mixer beat the sugar, eggs, and in a large bowl. Add the dry ingredients to the bowl and beat until completely combined. Then add the apple mixture.
- Scrape the batter into the oiled pan and bake for 1 1/2 hours, or until a fork or toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan, about 1 hour, and then extract cake from pan. (I did not do this and parts crumbled.)
- Drizzle the glaze on top of the apple cake before serving.
