Pizza Dough
Ingredients:
- 1 1/4 tsp. dried yeast
- 1 1/2 cups lukewarm water
- 1 3/4 cups bread flour
- 2 cups all purpose flour and more to dust
- 1 1/2 tsp. salt
- slug of olive oil
Directions:
- Dissolve yeast into the 1.5 tablespoons of water. Mix with 2 Tbs. flour. Stir to make a smooth paste (about a minute) and leave under a cloth somewhere warm for about thirty minutes for it to expand and form a sponge.
- Combine bread and all purpose flours in a bowl and make a well in the center. Pour sponge in center and add salt, oil, and remaining water. Mix while gradually adding in the dry ingredients to make a wet dough.
- Knead for about 10 minutes (I found it was fine after about 7-8 minutes), until elastic and satiny.
- Transfer dough to a clean bowl and cover with a cloth. Let sit somewhere warm until doubled in size, about 1.5 hours.
- If cooking in the oven, preheat to 500º. If cooking on the grill, turn all burners on low about 15 minutes before cooking.
