The Best Blueberry Muffins

For the muffins
  • 1½ cups plain flour
  • ¾ cup of white sugar
  • ½ tsp of salt
  • 2 tsp of baking powder
  • ⅓ cup melted butter
  • 1 egg
  • ⅓ cup milk
  • 2 cups fresh blueberries – There are 2 cups of blueberries in a pint
For the crumb topping (optional)
  • ½ cup white sugar
  • ⅓ plain flour
  • ¼ cup butter, cut into cubes
  • 1½ tsps ground cinnamon
For the jam
  • 1 cup blueberries
  • 1 tsp sugar
To make the jam
  1. Bring 1 teaspoon of sugar and 1 cup of blueberries to a simmer in a saucepan over medium heat.
  2. Cook the berries.  Stir with a spoon and break some of the berries open, stir frequently until mixture is thickened.
  3. Transfer to a bowl and cool to room temperature for 10-15 minutes.
To make the muffins
  1. Preheat oven to 400 degrees
  2. Line pan with muffin wrappers or grease muffin cups
  3. Combine the flour, baking soda, sugar and salt by sifting together over a large bowl
  4. Place the melted butter into a 1 cup measuring cup or a small bowl
  5. Add the egg and the milk to the melted butter
  6. Add the melted butter mixture to the flour mixture and mix together lightly.
  7. Add in the blueberries until everything is combined
  8. Fill muffin wrappers to the top and sprinkle with the crumb mixture
To make the crumb topping
  1. Add together the sugar,flour,butter and cinnamon
