Roasted Sugar Snap Peas


  • 1/2 lb sugar snap peas
  • 1 teaspoon extra virgin olive oil
  • coarse salt
  • 1 tablespoon chopped fresh chives


Preheat oven to 450 degrees.  Cover baking sheet with parchment paper or aluminum foil.  Toss peas with olive oil and spread in a single layer on the baking sheet.  Bake for about 8-12 minutes, until softer and turning golden brown.  Remove from oven and sprinkle with sea salt and chives.  Transfer to a bowl or platter and eat warm
