Roasted Potatoes with Peppers


  • Whatever potatoes your get in your box
  • Bell Pepper
  • Rosemary (or whatever herbs you like/have on hand)
  • Salt
  • Peppers
  • Extra Virgin Olive Oil


  1. Preheat oven to 400 degrees
  2. Cut or quarter potatoes, depending on their size
  3. Add potatoes to baking sheet and drizzle with olive oil, salt, pepper, and herbs
  4. Cut bell pepper into thin slices
  5. Bake for 15 minutes before taking them out to move potatoes around so they don’t burn
  6. Add bell pepper strips to baking sheet and place in oven for another 15 minutes
  7. Let cool and serve

*Replace baking sheet with tinfoil if you’d like to grill them.
