Apple Chips

  • 2 cups water
  • 1 1/2 cups sugar
  • 2 to 3 lemons, juiced
  • 2 small apples, you’ll receive Macintosh in your CSA boxes


Combine water and sugar in a small pot to create the simple syrup.  Bring water and sugar mix to a boil over medium heat before setting aside to cool.  (While this is not necessary, it makes the chips a little crispier.)

Place apples on flat surface.  Cut as thinly as you’d like using a sharp knife or a mandolin.  Remove any seeds from apple chip and sprinkle lemon juice on apple chip.  Submerge apple chips into the simple syrup and allow them to sit for a few hours, the more time the better.

Preheat oven to 200 degrees F.

Pat apple chip slices with a dry kitchen towel to remove dampness before places on a cookie sheet with parchment paper, place a weight on each end of paper as to not have it fold over the chips while baking.  Bake for 1 hour.
